At first glance, The Last Jedi can be taken fairly literally meaning that there is only going to be one Jedi left. Therefore it could be referencing that Luke is The Last Jedi or that Luke will meet an untimely end and Rey will become, The Last Jedi.
However, we would like to put across to you that the title should be taken literally however, its meaning, has been easily mistaken.
The Last Jedi, or more specifically, the Jedi part, acts both singular and plural.
The word, Jedi, has been used throughout the movies to describe both a single Jedi and a group of Jedi. There is, in fact, no such use of the word Jedis or Jedi’s the plural for Jedi is infact Jedi.
Due to this use of the wording, we have the opinion that the title does not refer to actually one person but rather this will be the last time the Jedi will rise.
As the franchises have gone on, we have seen the Jedi rise and fall. We believe, that in this latest reboot, that the Jedi will rise again to bring down the Sith, but, it will be for the last time.
This would tie in nicely as discussions to end the Skywalker Saga have gone underway and for Disney to only make spin-off movies such as Rogue One: A Star Wars Movie from now on.

As it was foretold that Anakin Skywalker would bring balance to the force, granted there are debates on how this happens but that’s a story for another day, it would make sense, and again nicely fits that, Luke Skywalker will bring back the balance.
What we are essentially getting at is that the title is to be taken literally, but, we don’t think it means one specific Jedi but rather the Jedi as a whole returning for one last time.
